Summer is upon us. Which means longer, hotter days, more socializing, and more time outside. I don’t know about you, but for me – summer means cravings for fresh watermelon, crisp summer salads…. and salt!! When I want something salty, the first thing I think about is french fries. I LOVE fries – but I don’t love all the calories and fat that they pack. This recipe is the perfect compromise!
This recipe is simple to make, requires minimal effort and ingredients, and is incredibly delicious. You won’t even miss the restaurant version once you try it!

In this recipe, I use my French seasoning. You can expect that I am always using my tri-salt blend as my salt of choice, but (as always) feel free to use any salt you have on hand!

How To Make Air Fryer Truffle Fries
It’s so simple! The full instructions are below, but here is an overview!
Fry-Prep
Shape-up
- Wash the potatoes well. You can peel them if you would like, but I typically leave the skin on!
- Slice potatoes into french fry shapes by slicing them into a medallion shape about 1/4-1/2 inch thick.
- Then stacking 3-4 medallions into a pile at a time, slicing vertically to create the classic straight-cut french fry shape.
- Repeat until all your potatoes are sliced!
Soak-it
- This step is optional but recommended for the best results.
- Soak the fries in cold water for about 20 minutes. When the time is up, drain and pat dry.
- Pro Tip: This step will remove some of the starches in the potatoes resulting in crispier fries that are less likely to stick together while cooking.

Air-Fryer Deets
One Layer
Placing the fries in one layer is very important for all-around crispiness. So you may need to air-fry them in batches depending on the size of your air fryer and how much you are making. I spray my fries lightly with regular olive oil before cooking and save the rest of the ingredients for later.
Time & Temp
I usually air fry them at 400 degrees F for about 8 minutes, then toss them around before cooking them again at 400 degrees F for an additional 5-6 minutes.
Finish Strong
Here’s where the flavor really comes in! Transfer your hot fries to a bowl and immediately add your truffle oil, salt, garlic powder, my French seasoning, and parmesan. Give it a good toss. And garnish with fresh parsley for a pop of green.

What Is Truffle Oil?
Truffle oil is simply oiI infused with truffle! Truffle is technically a type of fungus and is considered a culinary delicacy. They provide an earthy, umami flavor that elevates any dish. I used garlic and truffle-infused olive oil from Queen City & Co. (not an affiliate link – I just love this small business!). So my fries were extra garlicky – but I’m not complaining!
Can I use any type of potato?
Generally speaking, we are looking for a potato high in starch and low in moisture to yield that classic crispy on the outside, soft on the inside result. Russet potatoes are the most commonly used, however, you can also use Yukon Gold!

Troubleshooting Techniques
My fries are soggy!
A few things could be happening:
- you might not have patted them dry enough before cooking
- you didn’t have them in a single layer, any overlap can lock in moisture that decreases crispiness
- make sure you cook them twice and shake/flip in between cooking times to ensure all sides are crispy
How do I make them vegan or dairy-free?
Simply swap the parmesan cheese for its vegan alternative! Problem solved!
What do I serve with them?
First of all, whatever dips float your boat! I’m a ketchup girlie through and through. The thought of mayo or mustard even being in my presence makes me sick. BUT, tons of weirdos people love aioli and spicy mustard. I’m sorry but you’ll have to find a different food blog for those recipes (ha!). You could even consider a chimichurri sauce especially if you serve the fries with steak!
There are endless options to serve with this recipe. Grilled chicken or fish, burgers, meatloaf, salad, grilled veggies, and more!

Storage & Reheating
Store
Fridge: Transfer the fries to a glass storage container with an airtight lid. Allow it to cool to room temperature before securing the lid. Store in the fridge for up to 4 days.
Freezer: Not recommended for best quality.
Reheat
Air Fryer: For best results, reheat at 400 degrees F for 5 minutes.

Garlic Parmesan Truffle Fries
Ingredients
- 2 large russet potatoes
- 1 tbsp truffle oil
- 1/2 tsp The Spice Girl Kitchen French Seasoning
- 1/2 tsp garlic powder
- 1/4 cup parmesan cheese, shredded
- 1/2 tsp The Spice Girl Kitchen Tri-Salt Blend, plus more to taste
- 1 tbsp fresh parsley, chopped
Instructions
- Wash the potatoes well. You can peel them if you would like, but I typically leave the skin on!
- Slice potatoes into french fry shapes by slicing them into a medallion shape about 1/4-1/2 inch thick. Then stacking 3-4 medallions into a pile at a time, slicing vertically to create the classic straight-cut french fry shape. Repeat until all your potatoes are sliced!
- Optional: Soak the fries in cold water for about 20 minutes. Pat dry. Please note: even if you decide to skip the soaking step, you still need to pat your potatoes dry for best results.
- Spray the fries lightly with cooking spray. Arrange in a single layer in your air fryer.
- Cook at 400 degrees F for 8 minutes. Toss them around before cooking them again for an additional 5-6 minutes.
- Transfer your hot fries to a bowl and immediately add your truffle oil, garlic powder, French seasoning, parmesan, and salt. Give it a good toss. Garnish with fresh parsley.
- Serve hot and enjoy!
