Wash the potatoes well. You can peel them if you would like, but I typically leave the skin on!
Slice potatoes into french fry shapes by slicing them into a medallion shape about 1/4-1/2 inch thick. Then stacking 3-4 medallions into a pile at a time, slicing vertically to create the classic straight-cut french fry shape. Repeat until all your potatoes are sliced!
Optional: Soak the fries in cold water for about 20 minutes. Pat dry. Please note: even if you decide to skip the soaking step, you still need to pat your potatoes dry for best results.
Spray the fries lightly with cooking spray. Arrange in a single layer in your air fryer.
Cook at 400 degrees F for 8 minutes. Toss them around before cooking them again for an additional 5-6 minutes.
Transfer your hot fries to a bowl and immediately add your truffle oil, garlic powder, French seasoning, parmesan, and salt. Give it a good toss. Garnish with fresh parsley.
Serve hot and enjoy!
