“Soul-warming” is a big promise – but it’s a promise this tortellini soup recipe can fulfill! I continue to say on this blog – I love lazy ways to impress people. The easy clean-up of one-pot meals makes this recipe fall into the “lazy and impressive” category (at least in my brain it does, ha!).
This recipe reheats very well, making it a great meal prep option for the whole family to enjoy throughout the week. It’s also perfect for a busy weeknight. The formula for the best weeknight recipe is:
[minimal clean-up + ready in 30 minutes or less + satisfies the taste buds of the whole family].
When comparing the following recipe to the above formula, all I have to say is: Check, check, and check!

Veggie-Chopping Shortcuts
My name is Kelsey and I am addicted to cooking shortcuts. Whew! Glad I got that off my chest! I wasn’t lying when I said I am an “accidental private chef” in my bio. I do have limited knife skills and I am not ashamed to take a shortcut from time to time when it doesn’t sacrifice the result. I’m a simple home cook trying to keep up with feeding my family just like you (even though it’s just me and my husband at the moment… he eats a lot ok!)
Anyway… here are my 3 favorite veggie-chopping shortcuts:
Buy pre-chopped veggies (or pre-minced garlic)
- If chopping is what keeps you from cooking, then buy the dang pre-cut versions! It will be our little secret.
Buy a veggie chopper
- This is my go-to method. I love having the consistent shapes that I get from my veggie chopper. You can find the one I use here. It’s super affordable!
Utilize a food processor
- You only want to “pulse” a few times and not over-process them, but this is a quick and easy way to chop a bunch of veggies at once. Here is my favorite food processor!
Serving & Swaps

When I put my dietitian cap on, this tortellini soup recipe is already a complete meal because you have your protein, starchy carbs, fats, and veggies all in one. So, you technically don’t have to serve anything with it!
However, if you are interested in adding something else to the meal, I would suggest starting with:
- a simple salad
- dippable bread – like sourdough or focaccia
- homemade iced tea
Swaps
This recipe is extremely customizable. You could opt for a leaner protein by swapping the Italian sausage for ground turkey or chicken (I would just be sure to add extra Italian seasoning for flavor). You could add carrots or peas for additional veggies. Consider adding 1 cup of heavy cream to make it a creamy tortellini soup or swapping the cheese tortellini for a spinach tortellini. You could swap the kale for spinach or the chicken broth for veggie broth – all of these little changes make this recipe uniquely yours!
Store & Reheat
As a general rule of thumb, soup tends to store and reheat well because the broth helps it retain its flavor and quality. Just one more reason to love this recipe!

Fridge: Transfer the dish to a large glass storage container with an airtight lid. Allow it to cool to room temperature before securing the lid (about 30-45 minutes; the exact time depends on the amount of soup). Store in the fridge for up to 4 days.
Freezer: You can also freeze the soup for up to 3 months. Make sure there is enough broth to cover all of the ingredients – you may need to add some before freezing. Place the soup in the fridge to thaw overnight for best results.
Reheat
Microwave: Place soup in a microwave-safe dish, cover, and microwave on high for 1-3 minutes or until heated through. If reheating larger amounts, stir halfway through to warm it evenly.*
Stovetop: Place soup in a pot over medium-high heat. Once the soup is simmering, reduce to medium-low and cover for 3-5 minutes or until heated through. Stir occasionally.*
Oven: Not recommended.
* Total time depends on the amount you are reheating.
Soul-Warming One-Pot Tortellini Soup
Ingredients
- 1 tbsp olive oil
- 1 lb Italian sausage
- 1 onion, chopped
- 3 stalks celery, chopped
- 4 cloves garlic, minced
- 1 8.8 oz package cheese tortellini
- 32 oz chicken broth
- 1 28-oz can fire-roasted diced tomatoes
- 1 tbsp The Spice Girl Kitchen Italian Seasoning
- The Spice Girl Kitchen Tri-Salt Blend & pepper, to taste
- 1 cups kale, chopped
- 4 tbsp shredded parmesan cheese, for serving
Instructions
- In a large pot over medium heat, add the oil and the Italian sausage. Sautee for 5-7 minutes or until the sausage is no longer pink.
- Add in the onion and celery. Saute for an additional 3-5 minutes or until the onions become translucent.
- Add in the garlic and saute 1 additional minute.
- Add in the tortellini, chicken broth, fire-roasted tomatoes, and Italian seasoning. Add salt and pepper to taste. Bring to a boil, reduce to a simmer, and cook for about 5 minutes.
- In the last minute of cooking, add the kale and stir it into the soup. It should soften and turn bright green.
- Serve hot with parmesan cheese. Enjoy!
