One of my customers initially gave me the idea to try my Egyptian spice blend on some corn. This week, I set out to make Egyptian corn until I got to researching and found this classic Indian street food dish! It’s very similar to the way I would prepare my Egyptian corn. But since it is an actual Indian dish, I thought we would have a little lesson on Bhutta Masala instead!
In today’s blog, we will cover all things Bhutta Masala, different preparation methods, and storage & reheating information. Plus, give you a printable recipe so you can make this street-style Indian corn at home!
In this recipe, I use my salt-free Indian spice blend from my spice company – The Spice Girl Kitchen. I’m completely biased because it is, after all, my spice recipe and the best salt-free Indian seasoning on the market. But feel free to use whatever Indian seasoning you have on hand – or make your own at home!

All About Bhutta Masala
Bhutta Masala is a popular Indian street food. In this dish, the corn is roasted or grilled and then seasoned with a blend of flavorful spices, giving it a delicious and spicy flavor profile.
Bhutta
“Bhutta” simply means corn on the cob in Hindi. It’s a widely consumed snack in India, especially during the monsoon season when fresh corn is abundant. Corn is a staple in many Indian households, and it’s used in various culinary preparations.
Masala
“Masala” in Hindi refers to a mixture of spices. In this recipe, we use my Indian spice blend – which smells and tastes like a Tikka Masala blend! [the_ad id=”3378″]
Methods Of Preparation
On The Grill
Preheat the grill to a high heat. Directly place the corn on the grill and cook until all sides are charred.
Open Fire
On a gas stove, place the corn directly on the open fire over medium-high heat and let roast for 30-50 seconds until charred. Then carefully rotate using tongs until all sides are charred.
In The Oven
In an oven preheated to 375°F, cook the corn for 18-20 minutes in a baking pan. Move the corn to the top rack and broil on high for 1 minute per side or until charred on all sides.
After Charring
First, brush the corn with melted butter. Then take half a lemon and dip it in the Indian spice mix. Rub the spice mix over the corn until well coated to your liking. Add a pinch of salt and garnish with cilantro or green onion to finish.

Store & Reheat
Store
Fridge: Transfer the dish to a large glass storage container with an airtight lid. Allow it to cool to room temperature before securing the lid (about 30-45 minutes; the exact time depends on the amount of meat). Store in the fridge for up to 4 days.
Freezer: Not recommended.
Reheat
Microwave: Place the dish in a microwave-safe dish, cover, and microwave on high for 1-2 minutes or until heated through. If reheating larger amounts, rotate halfway through to warm it evenly.*
Stovetop: Not recommended.
Oven: Preheat oven to 375°F. Place the dish in an oven-safe dish, cover it with foil, and cook for 8-10 minutes.* This is a great option to keep the food warm for a crowd!

Street Style Indian Corn (Bhutta Masala)
Ingredients
- 4 ears corn on the cob
- 2 tbsp butter, melted
- 2 tbsp The Spice Girl Kitchen Indian Spice Blend
- 1 tsp salt
- 1/2 lemon
- green onion or cilantro, finely chopped, for garnish
Instructions
- Peel back husks from corn, if necessary. Pro: leaving some of the husks attached can help with rotating corn during roasting and makes a nice presentation.
- On a gas stove, place the corn directly on the open fire over medium-high heat and let roast for 30-50 seconds until charred. Then carefully rotate using tongs until all sides are charred. *see grill and oven methods in notes
- After charring, brush the corn evenly with melted butter.
- Place the Indian spice and salt on a small plate or in a small bowl and mix. Take your lemon half and use it to pick up spices out of the bowl or plate. Rub spice-coated lemon on the corn until coated to your liking.
- Garnish with cilantro or green onion. Serve immediately and enjoy!
