Okay, I know what you might be thinking: “Kelsey, aren’t you a dietitian? Do you eat white flour, full gluten, real sugar, chocolatey, and buttery chocolate chip cookies?” And my answer to that is YES. I have a major sweet tooth (I always have!). Plus, I subscribe to a lifestyle where I can eat a real chocolate chip cookie guilt-free. If you have a good relationship with food and a balanced lifestyle, an occasional chocolate chip cookie isn’t going to ruin your health or your progress. That’s just a fact. Plus, this lifestyle allows you to have those treats without feeling out of control.
I believe that food is more than fuel. It can feed your soul. It can amplify experiences, joy, and connection with others. Don’t miss out on what you enjoy because you are in a perpetual cycle of trying to change your body. Baking these cookies from scratch is also SUCH a fun way to spend time with kids in the kitchen. I don’t use any of my spices in this recipe. However, you can expect that I am always using my tri-salt blend as my salt of choice, but (as always) feel free to use any salt you have on hand!

The History of S’mores
The first recorded mention of s’mores appeared in a 1927 publication called “Tramping and Trailing with the Girl Scouts”. The recipe was credited to Loretta Scott Crew, who made them for Girl Scouts around a campfire.
The name “s’more” is a contraction of the phrase “some more,” since the combination of marshmallow, graham cracker, and chocolate proved to be irresistible. Today, they are a classic part of any camping trip and at-home backyard fire. We even have a National S’mores Day in the United States celebrated annually on August 10th!

Store-Bought Vs Homemade
In this recipe, we will be making homemade cookie dough. I love making homemade cookie dough because it only requires a few pantry staples like flour, sugar, butter, baking soda, chocolate (or vanilla) extract, eggs, salt, and chocolate chips. Plus, you can customize it to your liking. However, if you are short on time, using store-bought cookie dough is always an option!
For me, homemade cookie dough just feels more intentional. Again, if you have kids – it is SUCH a fun activity to do together!
What is Chocolate Extract?
Chocolate extract is a concentrated flavoring made from cocoa beans or cocoa powder. It enhances the flavor of a recipe, just like vanilla extract! Any extract is very concentrated in flavor, so remember little goes a long way!
Chocolate extract is made by steeping cocoa beans or cocoa powder in alcohol, which extracts the flavor compounds from the cocoa solids. The resulting liquid is filtered and bottled to create a chocolate extract. It’s not as common as vanilla or almond extract, but it can be found in some specialty stores or online (click here for an Amazon option). I got mine from my local farmer’s market. Remember to support small businesses when you can!

Equipment Needs
KitchenAid with Paddle Attachment
I know, I know. KitchenAids are expensive. And honestly, it’s not 100% necessary if you don’t think you will be getting enough use out of it. You could do this recipe with a handheld electric mixer (like the one below). However, I know that the investment is worthwhile for me (and a lot of people) because of how often I use it. If you have been on the fence about getting one, this is your sign to just do it. I recommend going with the 5-quart because it’s the largest option and honestly, go big or go home right? If you cook like me, It’s better to have too much room rather than double the work because I have to work in batches. You feel me?!
All KitchenAids come with whisk, paddle, and hook attachments. You can always add other accessories later as you find a need for them. OR make sure you put it on your Christmas list (we got ours off of our wedding registry!!). Plus, there’s always the option to wait for them to go on sale!
Handheld Electric Mixer
You can also make cookie dough with a handheld electric mixer. If you ever make cakes (even out of the box!), odds are you already have one of these on hand. But, if you are looking for an upgrade, here are my recommendations:

Large Cookie Scoop
A large cookie scoop is also known as #20. It holds 3 Tbsp or 1.5 oz capacity. Using a cookie scoop is a great way to ensure all of your cookies are even. For this recipe, you need to use the large (rather than a small or medium) to have enough cookie dough to enclose your graham cracker and marshmallows!

Store
Room temperature: Store in an airtight glass container at room temperature for up to 3 days.
Fridge: Store in an airtight glass container in the fridge for up to 5 days.
Freeze
Freezer: Store cookies in an airtight container or freezer-safe bag in the freezer for up to 3 months. Thaw at room temperature for best results.
Freezer #2: You can also freeze half of the cookie dough if you don’t want to make these all at once!! Store cookie dough in an airtight container or freezer-safe bag in the freezer for up to 3 months. Thaw at room temperature for best results.
S'mores Chocolate Chip Cookies
Ingredients
For Cookie Dough
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp The Spice Girl Kitchen Tri-Salt Blend
- 1 1/2 stick butter, at room temperature
- 2 cups brown sugar
- 2 large eggs
- 1 tsp chocolate extract (can sub vanilla extract)
- 1 cup semisweet chocolate chips
For S'mores Vibes
- 3 graham crackers
- 1 cup mini marshmallows
Instructions
Make The Cookie Dough (or skip these steps if using store-bought)
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a stand mixer (KitchenAid) fitted with the paddle attachment, cream the butter and sugar on medium-high speed for about 2-3 minutes or until fluffy. Add the eggs and chocolate extract and beat until blended. *See Notes.
- With the mixer off, add the dry ingredients. Mix again on medium just until the flour combines, adjust the speed to high for 5-10 seconds to pull the dough together.
- With the mixer off, add in the chocolate chips and mix again on high for just a few seconds to mix in the chocolate.
Add The S'mores
- Break the graham crackers into 8 sections, making squares.
- Using a large cookie scoop** or a tablespoon, scoop out 3 tbsp of cookie dough. Separate the dough ball into 2 sections. Sandwich a graham cracker square and 3 mini marshmallows in between. Carefully form the cookie dough into a ball around the fillings, pressing the seams together. Repeat for the remaining dough.
- Bake in 2 batches, 10 at a time. Bake on the center rack for 15 minutes, or until golden brown. Remove from oven and allow to cool for 1-3 minutes before transferring them to a cooling rack while you bake the second batch. Enjoy!
