These pink cocktails are PERFECT for your girls’ night!

I originally posted these 3 pink cocktail recipes around the Barbie Movie premier. They were Barbie-inspired! However, these recipes are NOT reserved exclusively for watching the Barbie Movie – they can be used at ANY girls’ night. Plus, they are the perfect poolside cocktails!
I don’t use any of my spices in this recipe. However, I used my tri-salt blend to salt the rim of the gin drink. Man oh man… it was game-changing!

Choosing Glassware
Ok, Tik-Tok has popularized fun glassware. As we all know, there are certain glasses for certain drinks. For example, wine-specific glasses, whiskey-specific glasses, martini-specific glasses, and margarita-specific glasses. When it comes to general rum or vodka drinks – the glassware you choose elevates the experience. It makes the cocktail feel fancy and very intentional. It’s part of your presentation, almost like a garnish! Choosing the best glassware influences the overall drinking experience.
The Glassware I Used
For my gin drink, I used these Vintage Art Deco Coupe Glasses. I got them off our wedding registry and I LOVE them! They are gorgeous and provide an elevated feel to the drink!
For the watermelon drink, I used these stemless margarita glasses! It provides an unexpected curve and they are some of my favorite glasses for cocktails!
For the dragon fruit drink, I used these ribbed drinking glasses. The texture of the glasses is playful for this perfect poolside cocktail!

Salted Rim
A salted rim is a classic cocktail addition, but I took it a step further and used my Elements of the Earth Tri-Salt Blend! It contains salt from the earth (Himalayan salt), salt from water (sea salt), and salt from fire (Lava Salt).
The blend of all 3 together provides a unique blend of minerals packed with a strong, salty flavor. A little bit truly goes a LONG way! Replacing your regular table salt with our tri-salt blend will provide you with more minerals and the same salty flavor that you know and love. And because it’s so pungent, you can use less for the same result!
Using my Elements of the Earth Tri-Salt Blend was a game changer on the rim of a cocktail!
How To Get The Best Salted Rim
You can use either a citrus wedge or simple syrup to get the salt to adhere to the rim of a drink. Here’s how it’s done:
1. Using a citrus wedge: Take a slice of lemon or lime and rub it along the outer edge of the cocktail glass. Make sure to moisten the entire rim with the juice. Then, dip the moistened rim into a plate or shallow bowl filled with salt. The salt will adhere to the moist rim, creating a salted rim for the cocktail.
2. Using simple syrup: Alternatively, you can use simple syrup to adhere the salt to the rim. Dip the rim of the cocktail glass into a shallow bowl or plate filled with simple syrup, ensuring it coats the outer edge. Then, dip the syrup-coated rim into another plate filled with salt, allowing the salt to stick to the rim.
A salted rim adds a delightful touch to the overall presentation and enhances the taste of the drink!

Homemade Simple Syrup
It just takes 2 ingredients and a few minutes to make a basic simple syrup. Here’s how:
- In a saucepan, combine equal parts granulated sugar and water (1 cup sugar + 1 cup water).
- Heat the mixture over medium heat, stirring constantly, until the sugar dissolves completely.
- Remove from heat and let the simple syrup cool to room temperature.
- Transfer to an airtight glass container and store it in the refrigerator for up to a month.
In one of the recipes below, I used dragon fruit powder to make the dragon fruit simple syrup. Click here to shop the dragon fruit powder I used.
Watermelon Sugar High Cocktail
Ingredients
- 2 oz white rum
- 3/4 oz lime juice
- 1 oz coconut milk
- 3 oz watermelon juice (store-bought or homemade)
- 1/2 oz simple syrup (store-bought or homemade)
Instructions
- To make the watermelon juice, simply blend 1 cup fresh watermelon in a blender until smooth. Run through a fine mesh strainer to remove any pulp.
- Add all ingredients into a cocktail shaker with ice. Shake well. Pour over ice into a glass with a salted rim and garnish with a lime wedge.

It just takes 2 ingredients and a few minutes to make a basic simple syrup. Here's how:- In a saucepan, combine equal parts granulated sugar and water (1 cup sugar + 1 cup water).

Poolside Dragon Fruit Cocktail
Ingredients
- 2 oz white rum
- 3/4 oz lime juice
- 2 oz coconut milk
- 2 oz dragon fruit simple syrup
Instructions
- Make the dragonfruit simple syrup. Instructions in the notes below!
- Add all ingredients into a cocktail shaker with ice. Shake well. Pour over ice and serve with a straw!

Dragon Fruit Simple Syrup
- In a saucepan, combine 1 cup sugar + 1 cup water + 2 tsp dragon fruit powder.
- Heat the mixture over medium heat, stirring constantly, until the sugar dissolves completely.
- Remove from heat and let the simple syrup cool to room temperature.
- Transfer to an airtight glass container and store it in the refrigerator for up to a month.

Pink Gin Drink
Ingredients
- 2.5 oz pink gin
- 1 oz lemon juice
- 1 egg white
- 3/4 oz simple syrup (store-bought or homemade)
Instructions
- Shake all ingredients in a cocktail shaker without ice (creates a froth).
- Add ice to the shaker and shake again.
- Serve without ice in your favorite martini glass. Enjoy!
