It’s easy to love lasagna. The way the layers of flat pasta noodles, cheese, rich sauce, and hardy meat meld together with such harmony is simply irresistible. This soup is everything you love about regular lasagna – packaged in a more low-maintenance way. With just one pot and 30 minutes, you have a meal ready that the whole family will enjoy!
In today’s post, we will dive into lasagna history, lasagna ingredients, equipment needs, and storage information. Plus, you will unlock the best lasagna soup recipe ever!
In this recipe, I use my salt-free Italian spice blend from my spice company – The Spice Girl Kitchen. I’m completely biased because it is, after all, my spice recipe and the best salt-free Italian seasoning on the market. But feel free to use whatever Italian spice you have on hand!

Lasagna History
Lasagna is believed to have originated in Ancient Greece, where layered pasta dishes similar to lasagna were created. The term “lasagna” itself is thought to come from the Greek word “lasanon,” which refers to a flat sheet of pasta dough. The Romans later adopted this term to describe their dish.
The recipe evolved further in Italy during the Middle Ages. It wasn’t until the 14th century that tomatoes were introduced to Italy. Lasagna gained popularity in different regions of Italy, with various variations emerging. In the United States, Italian immigrants contributed to the widespread adoption of lasagna, and it became a staple in Italian-American cuisine.
Today, lasagna is a globally recognized and beloved dish, with countless variations reflecting regional and personal preferences. Its layered structure and combination of pasta, meat, cheese, and sauce continue to make it a comforting and enduring culinary classic.
Lasagna Ingredients
One of these days I will post a legitimate authentic lasagna recipe. I do make it from time to time, but usually when I am having some friends over or want to make a particularly special meal. While the layers are satisfying and the meal makes an impression, it isn’t super realistic to serve on a normal weeknight.
That’s why I love this recipe so much. It takes a classic meal (that normally takes a while to bake in the oven) and turns it into a ready-in-30-minutes easy weeknight dinner.
Lasagna typically includes ingredients like lasagna noodles, ground meat (often beef or pork), tomato sauce, ricotta cheese, mozzarella cheese, Parmesan cheese, onions, garlic, and various herbs such as basil and oregano. We are going to take all of those ingredients and turn them into a soup!
Equipment Needs
One of the best features of this recipe is that it only requires one pot! This recipe can be made in a standard stock pot. But you could also use a Dutch Oven!
CAN I MAKE THIS RECIPE IN A SLOW COOKER?
Absolutely! Do steps 1 & 2 as normal then transfer everything (except lasagna noodles) to a slow cooker and cook on high for 3 hours or low for about 6 hours. Add in the lasagna noodles for the last 20-30 minutes (or until noodles are tender). Click here for the slow cooker I recommend!

Store & Reheat
As a general rule of thumb, soup tends to store and reheat well. That’s another reason I love this recipe!
Store
Fridge: Transfer the dish to a large glass storage container with an airtight lid. Allow it to cool to room temperature before securing the lid (about 30-45 minutes; the exact time depends on the amount of stew). Store in the fridge for up to 4 days.
Freezer: You can also freeze the soup for up to 3 months. Place the dish in the fridge to thaw overnight for best results.
Reheat
Microwave: Place soup in a microwave-safe dish, cover, and microwave on high for 1-3 minutes or until heated through. If reheating larger amounts, stir halfway through to warm it evenly.*
Stovetop: Place soup in a pot over medium heat. Once the soup is simmering, reduce to low and cover for 5-7 minutes or until heated through. You can add a splash of chicken broth if it is too thick. Stir occasionally.*
Oven: Not recommended.

Lasagna Soup
Ingredients
- 1 tbsp olive oil
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 1 lb 85/15 ground beef
- 4 cups low-sodium beef broth
- 2 cups marinara sauce
- 1 14.5-oz can fire-roasted diced tomatoes
- 1 tbsp basil paste (or about 5 large fresh basil leaves, chopped)
- 1 tbsp The Spice Girl Kitchen Italian Seasoning
- The Spice Girl Kitchen Tri-Salt Blend, to taste
- 8 oz dry lasagna noodles, broken into large pieces about 8-9 sheets
- ricotta cheese, shredded mozzarella cheese, and parmesan cheese, for serving
Instructions
- Heat the oil in a large stock pot over medium-high heat. Add the onion and saute for about 3 minutes. Add the garlic and saute for 1 additional minute.
- Add the ground beef, breaking it up as it cooks. Continue cooking until browned, about 5-6 minutes.
- Add in the beef broth, marinara sauce, fire-roasted tomatoes, basil, Italian seasoning, salt, and lasagna noodles. Stir to combine. Bring to a boil, reduce to a simmer, and cover. Simmer until noodles are tender - about 8 minutes.
- Ladle soup into bowls and top with a spoonful of ricotta cheese, a pinch of shredded mozzarella cheese, and a pinch of shredded parmesan cheese. Enjoy!
