Method
 

  1. Preheat the oven to 400°F.
  2. Heat a small dry skillet over medium heat. Add the pistachios and toast for 1 to 2 minutes, watching closely and shaking every 10-15 seconds, until fragrant. Transfer to a cutting board and roughly chop.
  3. Pat the feta dry with paper towels and place it in a small baking dish.
  4. Drizzle the olive oil over the feta. Sprinkle evenly with the Greek Seasoning and black pepper.
  5. Bake uncovered for 15 to 18 minutes, or until the feta is warmed through and softened around the edges.
  6. While the feta bakes, warm the honey in a small microwave-safe bowl for about 10 to 15 seconds or gently heat it in a small saucepan until pourable.
  7. Remove the feta from the oven. Drizzle with the warm honey, then sprinkle with the toasted pistachios, lemon zest, and fresh thyme or oregano.
  8. Serve immediately with warm pita, crostini, toasted baguette slices, crackers, or fresh vegetables.

  • Use block feta. Feta packed in brine becomes soft and creamy while baking. Avoid pre-crumbled feta for this recipe.
