Equipment

  • Large skillet: for cooking the beef filling
  • Large sheet pan: for assembling and baking the nachos

Method

  1. Preheat the oven to 400°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Stir in the garlic and cook for 30 seconds.
  3. Add the ground beef and cook, breaking it apart, until browned. Drain any excess grease if needed.
  4. Stir in the Mexican seasoning, salt, and tomato paste. Cook for 1 minute, stirring constantly.
  5. Pour in the beef broth, then stir in the black beans and diced green chiles. Simmer for 2 to 3 minutes until the mixture has thickened slightly. Remove from the heat.
  6. Spread half of the tortilla chips evenly over a large sheet pan. Top with half of the beef mixture, half of the cheddar cheese, and half of the Monterey Jack cheese. Repeat with the remaining chips, beef mixture, and cheeses.
  7. Bake for 6 to 8 minutes, or until the cheese is completely melted and bubbly.
  8. Remove from the oven and immediately top with the diced tomatoes, avocado, cilantro, and jalapeños. Serve with sour cream, salsa, guacamole, and lime wedges.

Notes

  • Storage: Sheet pan nachos are best served immediately. Store leftover beef filling separately in an airtight container in the refrigerator for up to 4 days.
  • Make Ahead: Prepare the beef filling up to 4 days in advance. Reheat before assembling with fresh tortilla chips and cheese.
  • Tips: Use sturdy restaurant-style tortilla chips instead of thin chips so they hold up to the toppings. Freshly shred the cheese for the smoothest melt. Layer the chips, beef, and cheese twice so every bite is loaded. Add fresh toppings after baking to keep the chips crisp.
  • Substitution: If you don't have The Spice Girl Kitchen Mexican Seasoning, substitute about 2 tablespoons of your favorite taco seasoning.
