- Bring a large pot of salted water to a boil. Cook the Campanelle pasta according to package instructions until al dente.
- Drain the pasta and immediately rinse it under cold water. This stops the cooking process and prevents the pasta from sticking together.
- While the pasta cooks, prep the other ingredients. For extra tender kale, massage it with a drizzle of olive oil for 1-2 minutes to break down the fibers.
- In a small bowl or jar, whisk together olive oil, basil paste, white balsamic vinegar, minced garlic, The Spice Girl Kitchen Italian or Greek Seasoning, and a pinch of salt and pepper. Adjust to taste.
- In a large bowl, combine the cooled pasta, kale, feta cheese, Parmesan cheese, and sundried tomatoes.
- Pour the dressing over the salad and toss until everything is evenly coated. For the best flavor, let the salad sit for 30 minutes before serving to allow the kale to soften and the flavors to meld.
- Give the salad a final toss before serving, and enjoy your homemade Mediterranean-inspired masterpiece!
