  1. Preheat oven to 375 ℉.
  2. Roll out the puff pastry sheet on a floured surface and cut it into small squares or circles to fit your mini tart molds.
  3. Press the pastry into the molds, making sure to create a slight edge.
  4. In a bowl, mix the softened goat cheese with French seasoning.
  5. Spoon the goat cheese mixture into each tart shell, spreading it evenly.
  6. Drizzle honey over the top of each tart for a touch of sweetness.
  7. In a separate bowl, beat the egg and brush the edges of the pastry with the egg wash.
  8. Bake in the preheated oven for about 15-20 minutes or until the pastry is golden brown.
  9. Allow the tarts to cool slightly before serving. Optionally, garnish with a sprinkle of French seasoning for extra flavor.
