Method
For Homemade Pastry*
- In a stand mixer with hook attachment, mix the flour and salt. Add the cold butter cubes and mix in well. It should resemble coarse crumbles.
- Gradually add ice water, a few tablespoons at a time, and mix until dough just comes together. Refrigerate for at least 30 minutes.
For The Filling
- Meanwhile, heat the olive oil over medium heat in a skillet. Add the onion and cook until softened, about 3-5 minutes. Add in the garlic and cook 1 additional minute.
- Add in the ground meat, breaking it up with a spatula as it cooks. Cook for 5-7 minutes or until browned.
- Add the Jamaican Seasoning and salt. Stir in.
- Add the breadcrumbs and beef broth. Simmer until the mixture thickens, about 2-3 minutes. Remove from heat and let cool.
Assemble and Bake
- Preheat the oven to 375 ℉ Line a baking sheet with parchment paper and spray with non-stick spray.
- On a lightly floured surface, roll out the dough to about 1/8-inch thick.
- Using a 4 to 5-inch round cutter, cut out 12-14 circles of dough.
- Place a spoonful of cooled meat mixture onto one side of the circle of dough. Fold the other half over to create a half-moon shape. Press the edges together with a fork to crimp the edges and seal the patties.
- Place patties on baking sheet and bake for 25-30 minutes or until the pastry is golden brown. Allow to cool 15-30 minutes before serving (the inside will be very hot). Enjoy!
Notes
*If you are not interested in making your own dough, feel free to buy pre-made biscuits or pastry dough. Skip the "for homemade pastry" steps, but You will still need to roll it out and cut it!
No KitchenAid? No problem!
- Simply use a large mixing bowl to combine ingredients and use a pastry cutter to mix the water and butter into the dough.
