Method
- Heat the olive oil in a large Dutch oven or soup pot over medium-high heat. Add the ground beef and cook for about 5 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
- Add the red onion, poblano pepper, jalapeño, and red bell pepper. Sauté for about 5 minutes, until the vegetables begin to soften. Add the garlic and cook for another 30 seconds.
- Add the corn, black beans, diced tomatoes with their juices, beef broth, Mexican Seasoning, and salt. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 10 to 15 minutes to allow the flavors to come together.
- Taste and adjust the seasoning as needed. If you prefer a thinner soup, add an additional splash of beef broth.
- Ladle into bowls and serve warm with your favorite taco toppings, such as shredded cheese, sour cream, avocado, cilantro, lime wedges, jalapeños, or crushed tortilla chips.

- Seasoning substitution: If you don't have The Spice Girl Kitchen Mexican Seasoning, substitute your favorite taco seasoning. Because seasoning blends vary in salt content, season the soup to taste before adding additional salt.
