Cajun Corn and Crab Bisque

Sweet corn, tender lump crab, and a creamy Louisiana-inspired base make this corn and crab bisque rich without hiding the flavor of the seafood. The Spice Girl Kitchen Cajun Seasoning adds warmth, while a quick corn-cob stock makes the most of fresh corn.

Ingredients

Equipment

  • Sharp knife and cutting board: To remove the corn kernels and dice the vegetables
  • Medium saucepan: To steep the corn cobs in the stock
  • Dutch oven or large heavy-bottomed pot To cook the bisque evenly
  • Whisk To incorporate the stock into the flour without lumps
  • Immersion blender or countertop blender: To blend a portion of the soup for a creamy texture

Method

  1. Cut the kernels from the corn cobs and set the kernels aside. Place the bare cobs and stock in a medium saucepan. Bring to a gentle simmer, cover, and cook for 15 minutes. Remove the cobs, allowing the liquid to drip back into the pan. Measure the stock and add enough water to bring it back to 3 cups.
  2. Melt the butter in a Dutch oven over medium heat. Add the onion, celery, and bell pepper. Cook for 7–8 minutes, stirring occasionally, until the vegetables soften without browning. Add the garlic and cook for 30 seconds.
  3. Sprinkle the flour over the vegetables. Stir continuously for 2–3 minutes to cook off the raw flour taste, keeping the mixture pale. Stir in the Cajun seasoning and salt. Slowly pour in the warm corn stock, whisking as you go until the mixture is smooth.
  4. Add the corn kernels. Bring the bisque to a gentle simmer and cook uncovered for 12–15 minutes, stirring occasionally, until the corn is tender and the broth has thickened slightly.
  5. Transfer about 2 cups of the soup to a countertop blender and blend until smooth, then stir it back into the pot. Alternatively, use an immersion blender for a few short pulses directly in the pot. Leave plenty of corn kernels whole. If using a countertop blender, vent the lid and blend hot soup carefully.
  6. Reduce the heat to low and stir in the half-and-half. Add the crabmeat, green onions, and parsley. Heat gently for 2–3 minutes, stirring carefully to keep the crab pieces intact. Do not let the bisque boil.
  7. Stir in 1 tsp lemon juice. Taste and add more lemon juice or salt as needed. Ladle into bowls and serve warm, with a little extra parsley or green onion on top if desired.

Notes

  • Crab: Use real lump crabmeat for distinct pieces throughout the bisque. Gently check it for shell fragments before adding it. Refrigerated pasteurized crabmeat works well.
  • Stock: Seafood stock gives the bisque a stronger seafood flavor. Low-sodium chicken broth makes a milder version that still lets the crab shine.
  • Corn: Fresh corn is ideal because the cobs flavor the stock. To use frozen corn, substitute 3½ to 4 cups thawed corn and skip the corn-cob step.
  • Seasoning substitution: If you do not have The Spice Girl Kitchen Cajun Seasoning, use 1 tbsp of another salt-free Cajun seasoning. If your substitute contains salt, omit the initial 1 tsp salt and season to taste at the end.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently over low heat, stirring occasionally, without boiling. Add a splash of stock or half-and-half if the bisque thickens in the refrigerator. The dairy and crab can change texture when frozen, so I do not recommend freezing the finished bisque.
  • Make ahead: Prepare the recipe through the blending step up to 1 day ahead and refrigerate. When ready to serve, warm the base gently, then add the half-and-half, crab, herbs, and lemon juice as directed.
