Street Style Indian Corn (Bhutta Masala)

Bhutta Masala, or street-style Indian corn, will change your corn on the cob game! This simple side dish is flavor-packed. Surprise and delight your dinner guests with this unexpected twist on a beloved BBQ staple!

Ingredients
  

  • 4 ears corn on the cob
  • 2 tbsp butter, melted
  • 2 tbsp The Spice Girl Kitchen Indian Spice Blend
  • 1 tsp salt
  • 1/2 lemon
  • green onion or cilantro, finely chopped, for garnish

Instructions
 

  • Peel back husks from corn, if necessary. Pro: leaving some of the husks attached can help with rotating corn during roasting and makes a nice presentation.
  • On a gas stove, place the corn directly on the open fire over medium-high heat and let roast for 30-50 seconds until charred. Then carefully rotate using tongs until all sides are charred. *see grill and oven methods in notes
  • After charring, brush the corn evenly with melted butter.
  • Place the Indian spice and salt on a small plate or in a small bowl and mix. Take your lemon half and use it to pick up spices out of the bowl or plate. Rub spice-coated lemon on the corn until coated to your liking.
  • Garnish with cilantro or green onion. Serve immediately and enjoy!

Methods Of Preparation

On The Grill
Preheat the grill to a high heat. Directly place the corn on the grill and cook until all sides are charred.
Open Fire
On a gas stove, place the corn directly on the open fire over medium-high heat and let roast for 30-50 seconds until charred. Then carefully rotate using tongs until all sides are charred.
In The Oven
In an oven preheated to 375 degrees F, cook the corn for 18-20 minutes in a baking pan. Move the corn to the top rack and broil on high for 1 minute per side or until charred on all sides.
After Charring
First, brush the corn with melted butter. Then take half a lemon and dip it in the Indian spice mix. Rub the spice mix over the corn until well coated to your liking. Add a pinch of salt and garnish with cilantro or green onion to finish.

Store & Reheat

Store

Fridge: Transfer the dish to a large glass storage container with an airtight lid. Allow it to cool to room temperature before securing the lid (about 30-45 minutes; the exact time depends on the amount of meat). Store in the fridge for up to 4 days.
Freezer: Not recommended.

Reheat

Microwave: Place the dish in a microwave-safe dish, cover, and microwave on high for 1-2 minutes or until heated through. If reheating larger amounts, rotate halfway through to warm it evenly.*
Stovetop: Not recommended.
Oven: Preheat oven to 350 degrees F. Place the dish in an oven-safe dish, cover it with foil, and cook for 8-10 minutes.* This is a great option to keep the food warm for a crowd!
